  1. Thanks for the list. I’m vegan and I love your site. The sweet and sour eggplant is one of my fav recipes. And I’ve found it easy to adapt a lot of your recipes. I make shakshuka without eggs and just throw in some chickpeas. It’s delicious.

  2. I’m a vegan! I’m vegan for my health, the earth and the animals. I want to be as compassionate as possible. Once you know what happens to animals, you just can’t NOT know it again! I love your Italian vegetable quinoa bowls (with vegan parmesan on top!)

  3. The entire family went vegan last May. After we watched Forks over Knives how could we not. We had shifted to all organic and non GMO a year earlier. It for health reasons but it sure helps keeping a kosher kitchen and I don’t have to worry about timing either. Now, what to do with all these blue and red items? lol

    I too watched Forks Over Knives and decided to be vegan (I was doing a 30 days vegan thing but had no intention to keep it). As time is passing, I realize that I also feel compassion for the animals and realize how wrong it is to be exploiting industrially animals.

  5. Sophia, that is how it started here as well. My Birthday gift was my husband’s diet for 30 days. Seriously he asked what I wanted and that is what I said, “If you can’t give me that don’t bother.” He agreed, “Because I love you.” lol He felt so good going walking gave us one on one time, we have six children ages 33-11. lol We both have lost 25# since June to Nov. Yeah, we stayed because we felt soooo much better.

  6. I’m a vegan for the health benefits. Not a moral decision ….although that is a side benefit. I also watched “forks over knives” and made the decision to try it for 30 days. Although weight loss was not a goal, I easily dropped 5 lbs that I have tried to lose for years. EASILY. My energy level was up, my blood work improved significantly, my sleep patterns improved drastically, and I have begun to enjoy cooking with my granddaughter (5 YRS OLD) and eating a conscious meal at the table! Sounds odd, but I am so busy working that I have not cooked meals or eaten at a table for years. The vegan diet is easy. My only hangup was cream for my coffee, which I solved with Coconut creamer (no it doesn’t taste like coconut!). Now the vegan diet is incorporated into my life and I can’t think of a reason I’d ever go back. It’s a personal choice though and I’d certainly never try to preach. I still buy cream for my friends at my dinner parties!
    Found you on the internet when I was looking for a Kale salad recipe. The Kale, Pear and Cranberry Salad is WONDERFUL!
