This 4-Quart enamel Dutch oven is great for cooking, marinating, refrigeration and freezing. The color porcelain enamel on cast iron can be used on gas, electric, ceramic, as well as in the oven. The cookware is cast from molten iron in individual sand molds then coated with multiple porcelain layers. The porcelain surface eliminates the need to season cast iron creating a smooth, hard surface that is easy to clean while maintaining superior heat distribution and heat retention. Better heat retention will actually reduce the amount of energy needed for cooking so it saves money. Tightly fitting lid seals in moisture. Stainless steel knob is oven safe to 400-Degree Fahrenheit. Not recommended for use on outdoor grills or over open outdoor flames. Not for use in microwaves. The black rim on the pot is matte porcelain, not exposed cast iron. I was skeptical about buying this because my other two cast iron pots are Le Creuset and Staub, and honestly, there is a certain snobbery with owning such pricey pots - I had to overcome my bias. I needed this middle size, and ALMOST bought a Staub, but then decided to go with this one just to see what I thought. I bought the red one. As soon as it came I washed it and braised a whole chicken in rosemary, pears, and leeks.There is absolutely NO difference in the performance of this pan. In fact, it comes with the metal knob (I had to buy one for my Le Creuset) It's fantastic! Super heavy, white interior, no chips, no flaws in the enamel, and the lid fits perfectly. The sides of the pot slope slightly towards the bottom (unlike the other two pots, which have straight sides) which I find I prefer. Never owned cast iron cookware before. A friend of mine who owns one recommended me to get one so I listened to her. Lodge cost less than that French brand. I am not a good cook but meat cooks tender and everything turns out tastier compared to cheap non stick pans. Highly recommended to people who cooks stews, stir fry vegetables/meat and soups. Love it!
