Mediterranean Fish in Tomato Sauce

Whisk together hot water, tomato paste, paprika, sugar or honey, cayenne and salt.

In a large saute pan, spread out cilantro, roasted pepper, and garlic cloves.

Place the fish fillets on top and sprinkle with salt, pepper, and red pepper flakes.

Pour seasoned tomato paste liquid over the fillets. Turn on heat and bring to a medium simmer.

Reduce heat, cover the pan, and simmer for about 15 minutes, basting with sauce every 3-4 minutes. Remove lid and let the sauce reduce for about 5-7 more minutes.

Serve fillets over your favorite starch.
