I’m so happy to find a new salad recipe with quinoa! Quinoa is so magic, whether in salads or as a side dish…Thanks for sharing this recipe!

I too got a thick paste for the dressing and wonder if a bit of oliive oil should be added;otherwise tasted good –just a bit dry.

Judy, so sorry about this– this is not Beth’s fault at all. We failed to add the olive oil to the dressing ingredients when we plugged the recipe into the site. I have corrected the ingredients. Apologies on our behalf! So glad you enjoyed the flavor.

Thanks Tori I love recipes with eggplant and I love spicy recipes. So this spicy eggplant casserole fills both loves.

After I pinned this recipe, I checked out the board for vegetarian Passover recipes. I was not able to access the recipe for ratatouille casserole. I got a warning that it was a suspicious link. Is there some way you can get rid of the warning?

Steven, our apologies– Beth DID include olive oil in the recipe. We missed adding it to the dressing ingredients when she plugged the recipe into the site. I have corrected the ingredient list. Human error, it happens. Very sorry and I’m glad you enjoyed the flavor!
